I love Lemons, especially with salt. I found a recipe for preserved or pickled Lemons and thought this would be a good way to keep them longer. It is so easy, takes about 3 months. The juice gets heavy like syrup and very salty. The pulp becomes very mushy. I like salty but maybe they are just a little too salty, so I found this recipe for Vietnamese lemon drink made with preserved lemons. I tried it changed it a bit, made my own taste and WOW I love it.
The glass is a small brandy glass with two slices preserved lemons, 1/2 cup water, one tablespoon sugar, two ice cubes. Adjust the sugar to your taste.
You can also leave out the water and sugar and add 7 up.
This seems like a good way to get lemon in your system when you can't keep running to the store for fruit.
