I believe hard times are coming for all of us, and if we prepare we will survive. We all need to be more self sufficient, and less dependent on government. The Prepper idea is good but most of us don't have the time, resource or skills to do it the proper way. I prepare the best way I can, even a little is better than nothing. Floods, hurricanes, earthquakes, tornados, plaques and many other things happen or will happen. Prepare as if you will never see another store or hospital again.

Butter















I did it, I canned butter. You may wonder why I would do such a thing. I live away from stores and have to keep food on hand, sometime in the winter you can't get out to go to a store, and I believe in storing food because a time will come when it may not be available, that's why. I know I could freeze it, and I do, but if the electricity goes off you loose your food.
This was an easy thing to do. I took pictures along the way. I used 4 boxes of one pound boxes of butter and got 4 pints. I used my biggest stock pot and was glad because bringing the butter to a boil for 5 minutes it foams up and a small pot would have overflowed. I stirred constantly, I was afraid it would burn, but it did not.
Separation started almost immediately after I took it off the stove so it had to be poured into hot jars fast. I kept shaking the jars because of separation but I now know I didn't need to do that until they were cool, close to the last. They all came together and made beautiful butter.
I did a google search and found the instructions on this and it is so easy, the cheese was harder.
Butter is supposed to last 3 years, and frozen it will last 2 months.
