I believe hard times are coming for all of us, and if we prepare we will survive. We all need to be more self sufficient, and less dependent on government. The Prepper idea is good but most of us don't have the time, resource or skills to do it the proper way. I prepare the best way I can, even a little is better than nothing. Floods, hurricanes, earthquakes, tornados, plaques and many other things happen or will happen. Prepare as if you will never see another store or hospital again.

My Soup

I worked at a hospital for 21 years and while there was privileged to have access to the recipes of the hospital chef. Yes, he was a certified chef, and could cook some mighty fine meals. This was not the regular hospital food. They made a special thing of how fine their food was and had sit down, white linen and silver, meals for the public each evening.
My favorite recipe that I received was "Tomato Florentine Soup". I make a lot of this and then freeze it, and it works very well, just cook a little less than the time called for so the pasta is still firm.
I live where there is very little access to a store and fresh vegetables so I have been dehydrating my vegetables and that includes spinach. Today I made my soup and used the dried spinach and it was just as good as the fresh.

I have recently used some of the cheese that I canned and it was very good, was glad I had it on hand. My next project is to can butter.
